Ultra Healthy Sweet Potato Cookies.

 

I like to have cooked sweet potato on-hand because they are not only tasty, but they can be added to almost anything! For example, sometimes I add it to my oatmeal in the mornings and other times I will simply mix it with some chocolate protein powder for a tasty, yet healthy treat (this actually makes for a great post-workout snack as it is high in protein and complex carbs).

How did I come up with this recipe? Well, I thought I would bake a sweet potato loaf for my family but after looking through a few recipes I thought to myself… there must be a recipe to make cookies with sweet potatoes! Sure enough, there were lots of recipes, but none that I liked, as a lot of them had plenty of added sugar, so this is what I came up with!

Ingredients

  • 1 cup sweet potato

  • 1 tsp vanilla

  • 1 tsp of baking powder

  • 1 tsp of baking soda

  • 1 banana

  • ½ cup of nut butter (I used PB)

  • ½ cup of oat flour (or ¼ cup of oat flour and ¼ cup of walnut/almond meal)

  • ½ cup of rolled oats

  • ¼ cup of sunflower seeds

  • 1 scoop of protein powder

Sweet potato cookie batter

Directions

Preparation time 10 minutes, cooking time 15 minutes.

  1. Look through the ingredient list first and make sure that you have everything! You will obviously require cooked sweet potatoes, if you don’t have some precooked ones on-hand then this will take you an extra hour or so to do.

  2. Set the oven to 350f and line a pan with parchment paper.

  3. Put all of the ingredients in a bowl and start mixing! If you have a stand mixer this will save time as you don’t even have to mash the banana.

  4. Place tablespoon size dollop of batter on the pan that has the parchment paper on it (this can obviously be adjusted depending on how big or small you want your cookies to be).

  5. Place the pan of uncooked cookie batter dollops in the oven and set the timer for 10 minutes.

  6. Remove the pan from the oven flatten the cookies out and flip them over and put them in the oven for 5 more minutes (I use a silicone spatula for flattening, you don’t have to flip them but I chose to so there would be a bit of browning on both sides).

  7. Remove the cookies, let them cool and enjoy!
